In search of recipes that I can add in my list, I found Redfish Courtboullion. Courtboullion pronounced as (coo-bee-yawn) or (coo-bee-yaw) silent “n” is a method of cooking in Louisiana which consists of thick rich fish stew or soup made with tomatoes, onions and sometimes mixed vegetables, served over rice. I got interested so I searched more. A great site to start with is www.GreatAmericanSeafoodCookOff.com. From the domain name itself, it is a cook off of American seafood. I just love the ingredients used in Mississippi Redfish Courtboullion with Seafood Dirty Rice. I’m sure the taste is also exceptional! Kudos to Chef John Currence of Mississippi for this excellent recipe! If I get to prepare this myself, I’m pretty sure I can do it. But I would remove the okra (lady finger) because I don’t like its taste. It is an easy to prepare and all in one dish because you can have rice and the viand. Perfect for us Filipinos and those who loved rice! The use of domestic seafood in our dishes has many advantages, it’s easy to find – you can find it anywhere, you can get it fresh from the market and if it is fresh, for sure it has great taste!
